做法:春笋切(qiē )成片后(hòu )加少许盐(yán )捞出后用清(qīng )水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分(fèn )钟左(zuǒ )右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量(liàng )清水半掩(yǎn )住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时(shí )候加入盐(yán ),翻炒均匀稍收汁(zhī )时(shí )盖上锅盖焖。
