做法:春(chūn )笋切(qiē )成(chéng )片后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再(zài )加(jiā )入(rù )生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上锅盖(gài )大(dà )火煮开后转(zhuǎn )中(zhōng )火。煮(zhǔ )到水快熬干的时候加入盐,翻(fān )炒均(jun1 )匀(yún )稍收汁时盖上锅盖焖。
