做法:春(chūn )笋切成片后(hòu )加少许盐捞出(chū )后用清水浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到水快(kuài )熬干的时候加(jiā )入盐,翻炒均匀稍收汁时(shí )盖上锅盖(gài )焖。
