做(zuò )法(fǎ ):春笋切成片后加少许(xǔ )盐捞出后用清(qīng )水浸泡,生姜切片(piàn ),葱切成段。锅烧热(rè ),倒入2勺油,放(fàng )入生(shēng )姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加入(rù )少量清(qīng )水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅(guō )盖焖。
